Ingredients:
1 kilo of green peppers
4 country -style sausages
1 kilo of ripe tomatoes
2 chopped onions
1 1/2 cup of olive
salt , pepper |
Method:
Wash and drain the peppers. Fry them in a cup of oil without lettig them get too browny. Take them out of the frying pan and fry the sausages (cut in two pieces). When they are fried ,take them out of the frying pan too and poor the rest of the oil into the frying pan. Then add the tomato paste (after you have peeled and smashed the tomatoes well) , the onion and a tiny bit of salt . Let this sause simmer for 20' minutes. Add the peppers and the sausages and let the "spetsofai" boil in a low fire until there is a thick sause left. |

1 kilo of dough
1 kilo of dry onions
1/2 kilo of "feta" cheese
4 eggs
1/2 a glass of condensed milk
1 1/2 cup of oil

Method:
Wash and chop the onions ,salt them and after you first lightly rub them ,let them be so for an hour so that the burn goes off and the pie becomes sweeter. Smash the cheese in a bowl ,add the eggs (a little striked) ,the milk , a little pepper , a little oil and finally tho onions and mix well . Divide the dough in 5 parts. Knead each of these pieces with a teaspoon of oil (so that the pastry will be rolled out more easily).After kneading them ,let them aside to "rest" for a little white. Then , take them one after the other, flour them and roll them out into pastry using a rolling pin .Oil a big roasting pan , preferrably an aluminium one , put in the first piece of pastry ,oil it , put in the second piece of pastry, oil it and spread over half the filling. Put in the third piece of pastry ,oil it and spread out the rest of the filling. Fold inside the pastry that is left over. Oil and put two more pieces of pastry on top. Add a little milk over it and slash into pieces.
Roasted in a warmed -up oven at 200 -220 for 50 -60 minutes.
